in the Plaka, a famous tourist area at the foot of the Acropolis, the Hermion
Restaurant will be taken over for a period of five weeks. In accordance with the
proposals, this restaurant will become the "House of Switzerland" and
will combine Greek cuisine and Swiss gastronomy. It will be open to the general
public as well as hosting Swiss Olympic officials, dignitaries and sponsors, and
will reveal the many flavours of Switzerland. As the inauguration of the "House
of Switzerland" is planned for 1st August, Swiss National Day, the restaurant
will already be open during the first two weeks of August, prior to the Olympic
Games. It will be divided into different sections: a large outdoor terrace with
a buffet where salads and crudités will be served alongside a bar and a
Bar-b-q area; indoors, there will be a downstairs à la carte restaurant,
and in the gallery a cocktail area and an event/function space. |

Management
of the "House of Switzerland" | | | |
| The management team consists of four Swiss staff members from "César Ritz" Colleges Switzerland, holding extensive hospitality, managerial and operational experience at an international level. Mrs. Claudia Doron has been nominated Project Co-ordinator and will work on the initial Swiss phase with Hervé Fournier, Vice-President of "César Ritz" Colleges. Claudia Doron and her husband, Ziv Doron, will be Hostess and Host in Athens. Raphaël Gross, Service Lecturer at the Institut Hôtelier "César Ritz", will be the Restaurant Director and Rudi Lütolf, lecturer at University centre "César Ritz" in Brig, will participate as Executive Chef, a position he held for six years in a Greek hotel school in Athens. This quartet will be leading a multicultural team of 23 enthusiastic "César Ritz" students from "César Ritz" Colleges Switzerland who have already worked in Swiss hotels and are accustomed to both Swiss and international customer needs. Their dynamic welcome will give customers an image of Switzerland as a modern and multicultural country, with the world at its feet. | | | |
